The unique taste of Yemen Mocha Matari coffee is due to two factors: unique climate conditions and human stubbornness. Plantations of this Arabica, cultivated in the Bani Matar region in the central part of Yemen, are located at considerable heights - from 2 to 2.4 thousand. m a.s.l., in a rocky, harsh, steep and steep area, might seem at least difficult, and perhaps unfriendly to people and their crops. At the same time, however, local soil - basalt, extremely rich in silica and magnesium - promotes the growth of the coffee tree; The proximity of the Red Sea and the Gulf of Aden means in turn the presence of sea winds that have a major impact on water circulation. Therefore, although the soil conditions are generally favorable, the coffee beans growing in Bani Matar experience constant water stress, which forces additional care, and only rewards the best, strongest individuals. Limited access to water also translates into fruit ripening - it significantly slows and lengthens it, and thus optimizes it. Naturally, the annual harvest is not and cannot be large, but the fruit is distinguished by its extraordinary quality. It also results from the fact that modern Yemen - just like their ancestors - do not use any artificial fertilizers or synthetic chemical preparations to cultivate the coffee tree.
The genetic features proper to the Mocha Matari variety can only be found in Yemen - so this is a variety typically local, whose characteristics appeared as a result of a very long, permanent impact of specific environmental factors. Mocha Matari fruits are small but the taste is unbelievably concentrated. They are grown on small, traditional plantations, and of course harvested by hand. At harvest time, before the fruit goes to processing and drying, some of it dries up even on the trees - it reminds of the Italian method of preparing grapes called appassimento, which produces a thick and thick, almost jam-proof wine.
, Yemen Mocha Matari is an excellent Arabica with a racial taste. Sweet aroma, with accents of chocolate, fruit and exotic nuances: from spices to cedar bark. The same range with no less intensity also appears on the palate: when tasting Mocha Matari, we can smell dark chocolate and dried fruit, grapes, cedar wood, well-baked butter cookies, and even ... flavors typical of young, a little wayward brandy. They harmoniously transform into noble, guilty acidity not imposed, but refreshing and provides the perfect buckle for a fantastically built taste. Grown in inhospitable conditions, for centuries with the same perseverance, Mocha Matari is excellent coffee and memorable for a long time.
