Wild-growing coffee beans of the arabica species, as well as the very word "coffee" (etymologically closely related to the name of the province, and earlier the kingdoms of Kaffa), quite convincingly prove that it was Ethiopia - a country where coffee was discovered for over 1400 years ago – it is coffee's true homeland.
And in any case - it is one of its homelands, as long as we consider Yemen as the second (according to others - the first and only). But that is another story. Nowadays, Ethiopia belongs to the leading producers and exporters of green beans (over 40% of all African production!), which after roasting produces a black drink, and the taste of local coffees is unique and undoubtedly worth tasting. In Ethiopia, you can find probably all types of coffee crops: from wild growing clusters of self-seeding plants, through small backyard plots and traditional family farms, to large, completely modernized plantations. From all this, about half of the raw material is obtained at the height of 1500 m a.s.l.
Coffee from the Dijmmah region is obtained by the dry method. This means that the beans are dried in the sun, and regularly turned and flipped over during this process. Its characteristic feature is light, silvery scales, which later, during the smoking process, affect the taste.
